Abstract
Local and organic foods play an important role in the discussion about
more sustainable school catering. In the city of Berlin, the use of organic food is part of the procurement rules for school meals. Little is known about how this policy contributes to local agri-food value chains. The present study examines the value chain for organic vegetables using a structuration theory approach. It shows structural factors that constrain the use of local organic food in school meals.
