Abstract
This study aims to more accurately define the Asian beef market, determining the demand for pasture fed beef and the meat quality specifications that must be reached. Farm management practices of farmers producing high quality cattle suitable for this market will be investigated, with the goal of gaining better knowledge of factors affecting meat quality. Successful practices will be highlighted and recommendations made that may help improve the quality of beef produced from pastoral finishing operations.
